Easy Chicken & Veggies

This is definitely my go-to meal. It really is so easy and quick too. I'm surprised my husband isn't tired of it yet since I cook it all the time. You can definitely customize it to what vegetables you like best.

Whenever I go grocery shopping I always get a 10lb bag of boneless, skinless chicken breast. They are quick to thaw and you can use it for so many things. This is what I start with and depending on how many people you are cooking for determines how many chicken breasts you want to cut up. For my husband and I, I usually cut up about 3-4 breasts into bite size pieces. This usually makes enough for leftovers too. For two people you could probably use 2-3 breasts. Next, you want to cut up your veggies. I normally like to use zucchini, green bell peppers, and sometimes tomatoes, but for this batch I just used 2 zucchini and 2 yellow squash from my husbands mimi's garden! I place all this in a big pan sprayed with some type of cooking spray. I have been using extra virgin olive oil non-stick cooking spray lately. After I spray the pan I place the chicken and vegetables on it. For seasonings I use salt, pepper, Italian seasoning, and garlic powder. I just sprinkle all of these evenly over the chicken and veggies. I preheat my oven to 400 degrees and cook this for about 25-30 minutes, depending on your over. I would check it after about 20 minutes. You don't want to leave it in too long or the chicken will get dry. I always make some rice to go with it as well. I'm lazy and get the boil-in-bag 10 minute rice. I get the brown whole grain rice to be a little healthier.

See, super quick and easy! Like I said before you can always change up the vegetables and even the seasonings. This is just what I like and use. You will have to let me know if you try out this simple recipe! Enjoy!

Last weekend was kind of random, but a lot of fun. My mom invited me to a Steven Tyler concert in Nashville with two of my aunts and one of my cousins. I like Aerosmith, but I'm not a die-hard fan, but I am a die-hard fan of Nashville so I said I would go. Plus, I don't get to go many places with my mom anymore, so I thought it would be a fun girls trip with her. My cousin and aunt were stopping somewhere before Nashville to eat but since we were going to Nashville I really wanted to eat somewhere downtown. I have heard a lot about Florida Georgia Line House and since I don't go to Nashville very often I thought we could try it out. We went around 3:30 or 4:00pm and that was the perfect time to go. Downtown wasn't that crowded yet and we were able to walk right into the restaurant and get a table. One of my aunts road with us and all three of us got the 'no joke mac n' cheese.' It was the best Mac n Cheese I have ever had, sorry Candace. It had chicken and bacon in it so you know it had to be awesome. If I am being completely honest with y'all I'm not the biggest fan of FGL, but I would definitely go back to have that mac n cheese. I'll post a picture of it below. If you go I definitely recommend it!

After we ate I wanted to take a few pictures instagram, so we went across the walking bridge that was right there close to the restaurant. My mom took some pictures for me and we just had a good time walking around. After that we headed to the concert. It was at the Carl Black Chevy Woods Amphitheater. I think they just call it the Woods Amphitheater. We didn't have the little beach chairs that were allowed so we had to sit on a blanket. It wasn't too bad, but my back started hurting a little. The band that opened for Steven Tyler was called The Sisterhood Band. They were good and they were from Nashville. The group was two women singing and big band. One of the singers dad is Rod Stewart so that was pretty cool. 

If I'm being honest again, I didn't even know Steven Tyler had a country album, but he didn't sing very many of his country songs. Thankfully he mostly sang Aerosmith songs, which is good because I do know those. All in all it was a good concert and we had a good time. Steven Tyler can still hit those high notes and gets around pretty darn good for 70.
